On a hot day, there’s nothing better than a creamy and indulgent chocolate ice cream. And if it’s made with the best quality dark chocolate, the taste is incomparable! This Dark Chocolate Ice Cream is the perfect dessert for chocolate lovers who want to enjoy an ice cream without additives and with all the intensity of pure cocoa. Get ready for a true explosion of flavor!

Ingredients

  • 200g of Alma do Cacau chocolate (70% or 85%, as you prefer)
  • 300ml fresh cream (preferably with 35% fat)
  • 1 can of condensed milk
  • 150ml of milk
  • 2 egg yolks (to ensure a creamy texture)
  • 1 teaspoon vanilla extract (optional)
  • A pinch of fleur de sel (to intensify the chocolate flavor)

Preparation Method

  1. Start by melting the Alma do Cacau chocolate in a bain-marie or in the microwave (in 30-second intervals to prevent burning). Let it cool a little before using.
  2. In a saucepan, heat the milk, cream and condensed milk over medium heat until it is almost boiling. Stir occasionally to ensure it doesn't stick to the bottom.
  3. Meanwhile, beat the egg yolks with a little hot milk in a separate bowl. Add the beaten egg yolks to the milk and cream mixture in the saucepan, stirring constantly.
  4. Continue stirring the mixture over low heat until it reaches a creamy consistency (approximately 5-7 minutes).
  5. Remove from heat and add the melted chocolate, stirring well until the mixture is smooth. If you prefer, add a pinch of fleur de sel to intensify the chocolate flavor.
  6. Allow the mixture to cool completely to room temperature (about 1 hour) and then place in the refrigerator for at least 4 hours so that it is very cold before beating.
  7. If you have an ice cream maker, transfer the mixture to the machine and follow the manufacturer's instructions until the ice cream reaches the desired consistency.
  8. If you don't have a machine, place the mixture in an airtight container and place in the freezer. Stir well with a fork every 30 minutes to prevent ice crystals from forming, until the ice cream is completely frozen and has a creamy texture (about 4-6 hours).
  9. Remove the ice cream from the freezer a few minutes before serving to make it easier to shape. Serve in cups or cones and, if desired, decorate with pieces of Alma do Cacau chocolate or a light pinch of fleur de sel for an extra touch.
