What Defines Authentic Chocolate?

  • FDA (USA): Defines that milk chocolate must have at least 10% cocoa solids .

Dark chocolate , considered by many to be " pure ", requires at least 35% cocoa solids . Thus, milk chocolate is technically real, but the addition of milk and sugar reduces its purity compared to dark chocolate.
